Non-Knitting

What a Crock

Black Bean Soup

1 medium onion (chopped) 
4 gloves garlic (minced) 
1 tbsp ground cumin
2 tsp crushed red pepper
2 tbsp olive oil
3 cans black beans
1 can chicken broth
1 jar salsa
2 tbsp lime juice

Place 2 cans of beans with liquids in batches with broth in blender. Blend until pureed. Put all ingredients in the crockpot and cook on low for 6 hours.

But he vetoed both of those, so I'm making him the Quick Ribs Hat by Rachel Plafchan using Lion Brand Wool-Ease Thick and Quick  in the Barley color. 

Also auditioning Socks on a Plane by Laura Linneman. I am making these for my mom and I'm still debating whether to use the Cherry Tree Hill Fingerpaints in Summer Sweet or Knit Picks Stroll Handpainted in the Wine Tonal color.

I cheated a little this week, so the only part of this recipe made in the crock pot is the chicken, but it's so delicious and easy I wanted to share it with you! 

I substituted plain fat free Greek yogurt for the olive oil to save some calories.

Free admission with fiber-y paraphernalia

Ooops! I can't find the original blog entry for this but the ingredients are: 
Bag of frozen tortellini
Small bag of fresh spinach (I use large bag)
2 Cans of Italian Style Diced Tomatoes
4 cups vegetable broth
1 block of cream cheese
Cook on low for 5-6 hours, stir to distribute the heavenly cream cheese
